What Does a Private Chef Actually Do?
A private chef does far more than cook a meal. Here is what the role really involves, from menu design and sourcing to service and the final wipe-down of your kitchen.

Most people picture a private chef as someone who arrives, cooks dinner and leaves. The reality is a full hospitality service that begins days before the first pan is lit and ends only when your kitchen is returned to the condition in which it was found. If you are weighing whether to hire one in Dubai, it helps to understand exactly what you are paying for, and where the real value sits. This guide walks through the role as it is practised in a professional private dining setting.
Menu Design Around Your Table
The work starts with a conversation, not a recipe. A private chef learns who is dining, what they enjoy, what they avoid, and what the occasion demands. For a dinner for six, I typically propose a menu of four to five courses and confirm it at least 72 hours ahead, allowing time to adjust for allergies, religious dietary requirements or a guest who simply dislikes cilantro. The menu is built to suit your home kitchen's equipment, not a restaurant's, and to flow at a pace that lets you stay at the table with your guests rather than hovering near the stove.
Sourcing and Shopping
A large share of the quality on your plate is decided before cooking begins. A private chef selects ingredients personally, often from several suppliers: a fishmonger for same-day catch, a specialist for aged beef, a market for herbs and produce. In Dubai, that can mean two or three stops within 24 hours of service, because freshness and temperature control matter in this climate. Ingredient costs are normally itemised separately from the chef's fee, so you can see precisely where the money goes.
Preparation and Cooking in Your Home
On the day, the chef arrives roughly two to three hours before service to set up a working station, organise mise en place and manage timings for each course. Sauces, garnishes and components are prepared or finished on site so that everything reaches the plate at the right temperature. A professional works methodically and quietly, using your kitchen without taking it over. Where a dish needs hours of advance work, such as a slow braise or a stock, that preparation is completed beforehand in the chef's own kitchen.
Service and Presentation
Plating is part of the craft. Each course is finished and presented with the same care you would expect in a fine dining room, and the chef can talk your guests through the dishes if you wish. For larger evenings, a service assistant may be added to clear and pour so the chef stays focused on the kitchen. The aim is a smooth rhythm, with roughly 15 to 20 minutes between courses, so the meal feels unhurried and the evening belongs to you.
Cleaning Down and Leaving No Trace
The part clients often value most is the one they never see. After service, a professional chef cleans all cooking equipment, wipes surfaces, removes waste and leaves the kitchen ready for the next morning. Any leftovers are labelled and stored with reheating instructions, and a good chef will leave a short note on what was served and what is in your refrigerator. You should wake up to a clean kitchen and a memory of an excellent evening, nothing more.
