How to Choose the Right Private Chef for Your Needs

Not every private chef suits every table. Here is how to match a chef's style, experience and working method to your household, your guests and your expectations.

Choosing a private chef is less about finding the most impressive résumé and more about finding the right fit. A chef who excels at ten-course tasting menus may not be the person you want cooking midweek dinners for a family of four. The real question is what you need the chef to do, how often, and in what style. Get that clear first, and the search becomes far more focused. This guide walks through the decisions that matter most before you commit.

Define the Occasion Before You Define the Chef

Start by writing down what you actually want: a single dinner for six, a weekly service, or a full week of meals during a family visit. A one-off celebration calls for a chef with strong presentation and live-service skills, while recurring weekly cooking rewards someone organised, consistent and efficient with batch preparation. Note your guest count, the number of courses you imagine, and any fixed date. A clear brief of even five or six lines allows a chef to quote accurately, typically within 24 hours, and tells you immediately who understands the work and who is simply sending a template reply.

Match the Cuisine and Cooking Style to Your Table

Ask what the chef cooks best, not what they can cook. A chef trained in modern European fine dining will approach a menu very differently from one whose strength is Levantine home cooking or Japanese technique. Request two or three sample menus and look at the balance: seasonal produce, clear flavours, sensible portions. In Dubai, ingredient access is excellent, so a good chef should be comfortable sourcing fresh seafood, quality lamb and imported specialty items. If your household has strong preferences, say so early, because a chef who adapts gracefully is worth more than one who insists on a signature style.

Look at Experience in Real Kitchens

Titles tell you little; kitchens tell you a lot. Look for a chef with at least five to eight years in professional environments such as hotels, restaurants or yacht and villa service, since that background builds speed, discipline and food safety habits. Ask how many private events or regular clients they have handled, and whether they have cooked in a home kitchen with limited equipment. Cooking in a client's home is a different skill from running a restaurant line. It demands quiet efficiency, careful cleaning and the judgement to work around your space and schedule without disruption.

Test Communication and Reliability Early

How a chef communicates before the booking is usually how they will behave after it. Notice whether they reply promptly, ask thoughtful questions about allergies and preferences, and confirm details in writing. Agree in advance on the menu sign-off timeline, commonly 48 to 72 hours before service, who handles grocery shopping, and what the cancellation terms are. A reliable chef will also have a clear backup plan for illness or travel disruption. Small signals, such as a tidy proposal or a quick follow-up call, often reveal more than a long list of credentials.

Start Small, Then Build the Relationship

If you are unsure, book a single dinner before committing to a regular arrangement. One evening shows you the chef's taste, timing, kitchen etiquette and how they handle your guests. Afterward, give honest feedback on seasoning, portion size and pacing; the best chefs welcome it and adjust quickly. Many clients find that after two or three services, the chef knows the household's preferences so well that planning becomes effortless. That familiarity, built over time, is what turns a good meal into a genuinely personal dining experience.
